Ingredients:
• Sea perch in one piece, gutted
• 15 leafs of fresh coriander
• 4 cloves of garlic
• 4 pieces of small red sweet pepper chili
• 1 piece of lemon grass
• 3 leaves of banana tree
• 1 leave of pandanus
• Salt, pepper
We clean the fish, we sprinkle it with salt and pepper. We chop very finely the coriander, the garlic, the chili and the lemon grass and we face the sea perch which was earlier rinsed and drained with the mixture. We put in the center the pandanus leaf. We wrap the whole up in the leaf of banana tree and we grill it for c 10 minutes on each side. We serve it with rice and with grilled slices to courgette. It is possible to buy pandanus and banana tree leafs in the Asian food store.
