Copenhagen!! Here I come!!

 

If someone, three years ago, told me I would be right here in this place, that I will get the internship in the best restaurant in the world, I wouldn’t believe him. I was studying photography and after finishing the school I got the best possible job – I became an assistant of a well-known photographer. Working with Lidka increased my self-confidence. Besides, I was doing things I love such as writing about the food. I became familiar with new places and with new worldwide culinary trends, and my curiosity was never fully satisfied. I always liked cooking but I never thought that it would become my source of living. One day, few friends of mine called me and asked whether I want to cook for them. I agreed without any hesitation. I had nothing to lose. I was a bit before the thirty, uncertain, whether I want to sacrifice the entire life for writing. And so, in 2011, my adventure with the gastronomy began. Accessing the No. 1 kitchen in the No. 1 eatery I had no clue about cooking in bigger proportions than a dinner for 5 friends. In hit-or-miss style I slowly developed my cooking skills. However, I learnt the most in the No. 2 eatery – starting from a correct way of holding the knife, through the basic culinary techniques, I also learnt of what not to do while cooking. Right at that time something interesting happened. Something that changed my life completely. In the end of a hot summer 2012 (maybe it just seemed so hot, I’m not sure) I was informed that my bosom friend was going away to the Suwałki Region, in order to work as a film operator for the Cook It Raw project. I knew very well, who will be there. After all, the best cooks in the whole world will arrive there, including Rene Redzepi, a conqueror of the title of the best cook, the head of Copenhagen’s NOMA, a restaurant which got the two Michelin stars. An absolute authority, so to speak. I always was, and still am, enraptured by his work. At that time, I asked my friend to pass Rene my regards and to let him know that such person as Marysia exists, lives in Poland and adores his work. It turned out that the friend had kept his word and told him everything – about how I started my adventure with cooking and how, day by day, I develop my cooking skills. What was the Rene Redzepi’s response? He recorded for me a 16 seconds film, during which he invited me to his restoration! And what did I do? I watched the film a dozen times, not believing in what I saw. And I hided the film deep in my drawer. And then I started working in the No. 3 eatery and at the end of 2013 I started having doubts, whether I know what I’m doing. Then my Mum said: ‘kid, you have received the film in which the best cook in the world invites you to work for him. So, reply to him! Maybe something will come out of that.’ I wrote him. In the meantime I started working in the eatery No. 4. My self-confidence came back to me, and then at that time I also got an answer from Rene. He directed me to his kitchen manager and I got the application, in which I had to describe the course of my education and career. I wrote frankly that I didn’t finish any school and I learnt everything within last three years and I still want to learn and to develop, and I would love to develop myself working in Noma. I waited impatiently for the response and in the end I got it. Positive!!! They entirely accepted my candidacy, in spite of my faint abilities. And still, they noticed a potential in me! Most probably, I am a so called ‘white card’ for them – without any bad habits, without any literary conventional wisdoms and taught grammatical rules, but in turn, with great passion. Here I am! Ready for a life adventure and at the same time horrified a bit. Copenhagen!!!! Here I come!
