Cheers from Bahnhof


– The idea of Bahnhof germinated in us for a few years – say the owner, Anna Pietras and Mateusz Pieczko. After years spent on performing their learned professions they came to the conclusion that it’s now or never. Those who don’t take risks, don’t drink champagne. The search for a space lasted for months. They wanted to use the post-industrial character of our city, which paradoxically turned out to be very difficult. Katowice offer a lot of places suitable for adaptation, which, while beautiful, are completely untouched. Their repair would take years and would cost a fortune, which they didn’t have. When they found a place at the forgotten street Kordeckiego, something changed. The street isnext to the railway track at the fourth platform of Katowice station. They sat under the lovely peach facade and thought that the sight and smell of trains hits the bull’s eye. Renovation began in May.Bahnhof opened exactly on Barbórka, major Silesian holiday.
 
The authors of the interior design, tables and most the furniture are Agnieszka Siwek and Ola Dobrzańska-Sadowska from Desde Studio in Gliwice. They quickly understood the character of the place and owners’ wish to make it simple, train-station-like, but also as homey as possible. The first proposal of the interior design was a success and with small corrections along the way, the architects finalized the project. The crew made the arc from scratch. Now it is a characteristic element of the interior, which guests immediately remember. – About the execution of Bahnhof’s interior we can say one thing – says Anne – we owe it to family and friends. Steel structures of tables and shelving behind the bar were created with help of friends of our parents, railway station benches were screwed by our friends. Diagram of the Berlin’s U-Bahn was painted on the wall by our sister’s boyfriend and lamps that hang in the restaurant come from the liquidated mines of Ruda Slaska – they have been cleaned and painted, and each one weighs 9 kg!
They had the concept for Bahnhof’s menu in their heads from the beginning, but it took a lot of time to find a cook who would share their energy and views on taste, quality and origin of the products. Finally they decided on a non-binding form of a burger, which gives you unlimited scope for culinary tours. They love comfort food and they want to share their love with their guests. Roman Fic heads the kitchen, a native Silesian, who was to become a sociologist, but he had chosen cooking. He has a degree from Westminster Kingsway in London. Before they started working together, he’d spent a few years cooking in London, two years in the French Alps, and finally – the last half year in one of the best restaurants in Croatia.
 
Bahnhof’s cuisine is based on products strongly associated with Silesia. Meat is provided by a butcher with a huge knowledge and experience, and after many attempts the owners found a Silesian baker, in the profession from four generations, who bakes crispy and soft bread, exactly what they dreamed of. – We made it a point of honor to create all semi-finished products for the burgers from start to finish in our kitchen. It’s a hard work of the whole team, but so far beyond mayonnaise – every sauce and chutney is with us from the stage of vegetables until pasteurization in jars, and then lands between two pieces of bread. Ketchup with gingerbread spices, raita with cucumber and mint and roasted garlic aioli is our pride. We change the menu often. We have a fat Silesian “Pyrsk” burger (in Silesia “cheers”) with cottage cheese baked with caraway and blood sausage, British Edward with truffle paste, egg and crispy leek, Roman with artichokes, onions stewed in balsamic vinegar and buffalo provolone straight from Italian Campagnia. We take care of vegetarians, we feed them with Falafel with creamy smoky baba ghanoush and grenade. On the days there will be the jewel in the crown – burger with foie gras, apple chutney and crispy artichokes. We bake potatoes for french fries twice, then sprinkle them with salt black as coal. It is worth coming to Katowice, best with Pendolino, which literally parks in front of the windows – we and the owners recommend it.
