USTA NO. 5

We deal with difficult subjects that were put away for some time. Firstly meat. The entire section. Grzegorz Łapanowski boldly professes love for meat and teaches us how to choose it well. Magdalena Kasprzyk-Chevriaux and Przemysław Nieciecki show us around through the world of Parisian butchers, cuts and partitions, and Peter Pieńkowski shows us the farm in the Lublin region, which implements the breeding of the black grass-fed Angus cattle. Podróbka prepares offal the Brazilian way. And Katarzyna Bogdańska draws an entire archipelago of steaks. There are no steak without good knives, therefore we write about our beautiful polish Kłosy. Grzegorz Kapla talks about the ideal structure of the meat with the pioneer of sous-vide cooking, Bruno Goussault. There are also five variants of Agata Pospieszyńska’s tartare, photographed so deliciously that our mouths are watering. And Dorota Chrobak looks “Under the Skin”.

We show previously unpublished photos of Natalia LL, from the time of formation of the sensual series “Art of Consumption”, and we talk with her about Wrocław’s cool generation, the beginning of the Polish critical art and censorship in the former Polish People’s Republic. Bogdan Deptuła writes about their feminist dimension. A dancer and actress Ewelina Guzik known from Pipilotti Rist’s movies shows us around in Zurich.

Małgosia Minta writes about staff meals, in which an ordinary restaurant client has no chance to participate. USTA managed to photograph one of them in the Warsaw’s Ale Wino, a restaurant, which we particularly like. Gosia and Tomek Rygalik print food in 3D. Eliza Morawska announces a book about bread, which will be released in April. Marta Greber teaches us how to make homemade candy bars, Konrad Konstantynowicz tracks god shots – perfect espresso. We also visit a just opened patisserie Odette and talk with one of the most famous women in the wine world, Isabelle Legeron. We eat special Easter dinner in a greenhouse, which Magdalena Święciaszek cooked for us. And finally germinate again with Teresa Murak and Ania Królikiewicz. A lot of good in USTA!
