Before or after?


Spagettii alla carbonara
Ingredients ( for 2 persons)
250 g spaghetti pasta
3 eggs scalded and wiped dry
100 g pancetta (or bacon), cut into thin slices
1 spoonful of olive oil
40 g of Parmigiano-Reggiano cheese, wiped off into thin slices
black newly ground pepper
2 spoonfuls of chopped parsley leaves (optional)
 
We heat the oil on deep frying pan. We add pancetta and we are stir-fry it  until the fat is molten, and pancetta becomes  crunchy. We remove it from the fire and we put it aside.  We transfer pancetta back into the frying pan, we add a few spoonfuls of water from the pasta. While shaking the frying pan, we mix all the ingredients  and heat them up on the slight fire for 1 minute.  We add cheese, whipped egg and 2 egg whites (we remain 2 yolks for serving), we flavor it with pepper. We add parsley leaves chopped up (optional).  We put the pasta into bowls, inside we make a hollow in which we stick the yolk.
