Salted caramel with basil for the refreshment


One day a media vehicle appeared on the Square of Plac Zbawiciela with a hand written trade name ‘Lody Naturalne’ and with a few tastes: vanilla, chocolate, creamy, strawberry … the majority of tasted were crossed out. Next to the shop window a few persons were standing and receiving the ice cream cones one by one. ‘I am sorry, the are no more ice creams, please come back tomorrow’ – I heard, when I asked for the mango flavor. Although the ice-cream place didn’t have any Facebook fanpage, neither a decent nameplate, a quick investigation revealed that the rumor about the new ice cream place is circulating since couple of days among people inhabiting surroundings of the Plac Zbawiciela square. And the persons responsible for opening the ice cream place are well known of conducting a confectionery temple – the small factory of the Sucré French Macarons. They are Paweł Sypniewski and Mikołaj Paszkowski.
Ice cream making is an art. Where did you learn it?
Paweł: Last year in September I was in Italy next to Milan, where I was lucky to find the place where head chefs working for one hotel were being trained. I was trained by the owner of an Italian confectionary, who was passing on with passion not only the bases, but also his own traditional recipes. We also talked about the production of the French Macarons.
Mikołaj: The idea of making our own ice cream sounded really good. We started browsing all available sources concerning the idea: books, films, we soaked the knowledge up from everywhere. We wanted to get to know this magic alchemy well and to understand, how it is possible, that, in spite of the low temperature of -12 Celsius degrees, the ice-cream isn’t sticking to the tongue.
What is more difficult – ice-cream production or baking the French Macarons?
Paweł: Both delicacies have their requirements, are a little bit whimsical, it is a challenge even for very experienced pastry cooks.
What kind of ice cream flavor is most enjoyed by the Poles?
Paweł: Poles like quite classic tastes such as cream, vanilla, chocolate and of course our native strawberry.
Best ice-cream you have ever eaten?
Paweł: Indecently we will say that our own ice cream taste according to us the best. Pistachio, almond, the Polish strawberry flavor… it’s my favorite!
