CORN PANCAKES WITH THE BASIL SORBET


Corn pancakes:

  • 1 zucchini – 300 g
  • Corn – 200 g
  • 2 teaspoons of purified soda
  • 2 teaspoons of lime juice
  • 100 g wheat, gluten-free flour
  • 2 teaspoons of salt

We grate the zucchini, we add the salt and we wait for 10 minutes. Then we precisely squeeze the liquid. We mix half of the corn smoothly with the rest of ingredients, we mix it with  zucchini and corn. We let the pancakes fry on a bit of oil for 5 min.
Thai basil sorbet

  • Lime juice (made of 8 limes)
  • 30 g Thai Basil
  • 300 g of sugar
  • 200 g of water

We boil the water with sugar, we let it chill and we are add the lime juice with finely cut into stripes thai basil.
Coconut juice

  • 80 g of coconut milk
  • 5 g of lime grass
  • 5 g of galangal
  • 5 g of scallion
  • 3 g = 1 / 2 of spicy chili
  • 3 leafs of lime kaffir/papeda
  • 1 tablespoon of lime juice
  • 1 tablespoon of soy sauce
  • 2 pinches of salt

We mix all the ingredients and we heat it up without boiling it. On a plate bottom we pour out 2 spoonfuls of the coconut sauce, and on top we fix 3 pancakes and a spoonful of sorbet. Bon appétit!
