Urban farm in the shipyard

 

The ‘Commis Made’ Project by Metamorfoza restaurant has been running for four years. The previous editions were dedicated exclusively to chefs, sector media and specialists, but this year, it opens up to the local community. This year’s edition – Urban Farm Stocznia Gdańska – started in January 2016 and it required the work of many specialists and volunteers to succeed. It was at that time that the construction of the Urban Farm started in the unique space of the Gdańsk Shipyard. Six months later you will find there a well-functioning ecosystem, whose emblements will be harvested for the event tomorrow. The knowledge and mistakes earned throughout the project by Metamorfoza restaurant team, farmers (e.g. Milejowe Pole) and a group of enthusiastic volunteers inspired the meeting of excellent Polish chefs, such as: Darek Barański, Marta Edmunds, Adrian Klonowski, Witek Iwański, Paweł Dołżonek, Krzysztof Rabek, Marek Flisiński, Marcin Szwak and Maciej Nowa. In the days between 10 and 13 July in Gdańsk they will become apprentices again (commis fr – assistant to chef) to discover new solutions matching the ambitions of the 21st century restaurants. During the final days of the event at the Shipyard there will be lectures, workshops and other shows covering such topics as: architecture, sustainability (a global approach to ecology), ergonomic design, harvesting (on different types of grounds, in changing conditions and with various fertilisers), mycology and fungiculture, endemic and ancient plant species, food processing (fermentation, vinegar production, pickling, drying, maturing, smoking), hydroponics, using rainwater, cheese and other dairy products making, beekeeping vs. honey hunting, brewing, fruit wine production based on rainwater, meads, gathering, hen keeping and “no waste” work philosophy. Meanwhile, tomorrow’s evening will be closed by a unique food truck gathering. Inside them the chefs invited by the Metamorfoza restaurant will prepare dishes based solely on the crops from the Urban Farm and products from local, trusted suppliers.
