The Sunday menu looks just delicious. There will be french toasts with chia seeds, almond cottage cheese, strawberries in black pepper and balsamico, chia pudding, mango mousse with coconut flakes, leaven bread, avocado with tarragon, tomatoes confit with rocket salad and lots of other delicacies. As for the hot plates, we will serve grilled cauliflower, roasted almonds with raisins and tahini and frittata with cauliflower, green beans, kalamata olives and grated lemon zest.
The host and author of the menu is Michał Gniłka, a chef regularly co-operating with USTA Magazine, who gained his culinary professional experience in London. Gniłka used to work in different places: from ecological restaurants to food markets. One of his most interesting experiences was a year spent on Hollywood productions filmsets. It was at that time that he had a pleasure to cook for Steven Spielberg, Ridley Scott, Keanu Reeves or Charlize Theron. For ten years he was constantly in between London and Mexico. He worked on Bali as a menu consultant for a restaurant in a very fashionable area of Seminyak. As Mickey Rotten he weekly publishes his vegan recipes at www.ustamagazyn.pl. He also represents Poland as one of the new generation of Poland’s most talented chefs in „Apetyt na Polskę/ Apetit for Poland” book and in the Eat Poland project for the Polish Ministry of Foreign Affairs (www.eatpoland.net). He runs his own culinary studio where he invites guests for unique Private Dinners.
