A blackcurrant ball stuffed with yoghurt, kombucha and flower pollen, dried cabbage leaves sandwiches with a paste of watercress and salicornia with squid garum or pumpkin with white sturgeon caviar, beech nuts and kelp in and koji and butter emulsion. Everything was perfect!
